Carrot mixed rice is easy to prepare and healthy too, as it contains vitamin-A which is good for kids especially.

Ingredients

  • Cooked rice - 3 cups
  • Carrots - 1
  • Onion (medium) - 1
  • Tomato - 1
  • Green Chillie - 1-2
  • Chillie powder - 1/4 tsp
  • Turmeric powder - 1/4 tsp
  • Masala powder - 1/4 tsp
  • Curry leaves - little
  • Coriander leaves - little
  • Cashew nuts - 4-5
  • Bay Leaf - 1
  • Salt to taste

Instructions

  1. Grate carrot and chop onion, tomato, curry leaves and coriander leaves.
  2. Make nuts into small pieces.
  3. In three tbsp of hot oil season with bay leaves and fry cashew nuts.
  4. Add onion, tomato followed by curry leaves and saute it well.
  5. Add carrot and saute for a while.
  6. Now add chillie powder, turmeric powder, masala powder and little salt.
  7. Mix it well with sufficient water and allow to cook for three minutes.
  8. When the gravy becomes thick add cooked rice and required salt and mix thoroughly.
  9. Remove from the flame and sprinkle the chopped  coriander leaves.
